Chalet Suzanne – Out of this world soup

Canned soup: we’ve all had it by now. So why now with all the hubbub? Because there are other things out there. Looking through your cupboard and see the same flavors repeated indefinitely though your life – chicken, broth, veggies, chicken, broth, rice, repeat. It’s time to wake up and roll over those taste buds. With classic style and taste but a departure for the ordinary – Chalet Suzanne brings us their Romaine soup.

Sounds familiar, why do I know the name?

Chalet Suzanne has an infinitely rich history: 1931 the restaurant was established and has lasted through a fire, changing of generations, poor economies and strong ones. Nestled in the lake speckled lands of central Florida, the restaurant and country inn has been feasted at and stayed in by an innumerable amount of dignitaries, hollywood faces, and families. From the air strip to the ‘down-home’ feeling of the restaurant and kitchen, there is a sense of family. The open arms and feeling you get when at the Chalet Suzanne carries over to their soups.

Hows about the soup?

Well, as far as the Romaine, it’s a thick mix of mushroom and other goodies like garlic, salt, pepper. It’s so good, it’ll take you to the moon – which this soup already has done. Yes, thats right it was on Apollo 15 & 16. A soup so awesome that it was packaged up and sent into orbit – you’ll not want to miss this ‘out of this world’ soup. If you like chunkier soups – add mushrooms, onions and even sliced tomatoes to the soup to make it a thick delicious brew of chunky tastiness.

Where can I get it?

Right here on our shelves, we carry a couple other flavors of theirs like the mushroom and french onion – both just as great as the Moon Soup (the other name of the Romaine soup). We try and keep Chalet Suzanne soup in, but if you are looking for another flavor, we are low, or missing one, let us know and we can order some for you. Frontier Soups – Slurp the tradition of natural

There is a growing trend in the world of soup – it may be strange to those unfamiliar with it but it has been around for an uncountable number of years. Dry soup mixes were available at the chuck wagons of the great American west, a trade item in the bustling cities out east, and in the 1940s dry mixes exploded through the market as an inexpensive way to feed a family. Recently there has been a resurgence in dry soup mixes and more focus on natural ingredients, without all the questionable additives. Frontier Soups is one of these purveyors of all natural and preservative free dry soup and dip mixes.

Dry Soup? Like blocks of noodles?

Sort of.  Frontier soups don’t have those crunchy blocks of ramen or tiny packets bursting of salt and suspect ingredients. All of Frontier’s soup mixes are packed with legible ingredients, not only that – but are stuffed into clear plackaging so you can see the corn, onions, spices, and more in right there in the package; not hidden behind paper-like tear away sack with a few strings of noodles and a powdery mess. We love all the soups by Frontier, but we especially like the Tortilla soup, a finalist in ’07 for outstanding product from NASFT. It’s a beautiful blend of black beans, sweet corn, red & green peppers, onions, garlic and spices. It’s super easy to make – Chicken broth, water, chicken, salsa, and 30min is all you need. They suggest crumbling a handful of tortilla chips for a bit of crunch and we agree – it’ll perk up the soup for sure, but aren’t necessary to make this soup complete. Frontier Soups has outdone themselves with this Tortilla soup, it’s not too spicy – it’s got a smooth chili flavor – not all broth – enough ‘goodies’ in the bag to go around – the soup is awesome. Call your friends and make this soup, it’ll be ready as they knock – what could be better when it’s getting cooler outside? On a crisp October day, nothing is more fitting than a bowl of soup – and why not have a great one, like those from Frontier Soups.

Where does it come from? Where do the recipes come from?

It comes from the great state of Illinois, in the Chicago suburb of Waukegan. Frontier soups started in the basement of founder, Trisha Anderson, where she worked in catering and making food for her family and friends, eventually her soup and dip mixes caught on to where she had to expand and now takes up 8,000 hundred square feet of warehouse. Trisha creates all the recipes herself and her knowledge of flavor mixing and creation is spot on – never overpowering and always satisfying.

Where can I get the soup and dip mixes?

Here, At Southport Grocery. We try and keep a few flavors of dips and soups, but if you can’t find one you are looking for or we’re missing one we usually carry (like the tortilla soup) – let us know and we can get it for you. We’re giving a free single serving container of soup with each entree for those who dine in… heat up on any cold day. The official start of Winter Season began a little less than a month ago. If you ask a Chicagoan, however, he or she might tell you Winter began in October.

In either case, there are officially 8 weeks of Winter left…or so we hope!

Carrot Ginger Bisque

Ginger-Carrot Bisque
5-6 servings

1/2 tablespoon butter
1/2 large onion, diced
5 carrots, diced
2 stalks celery, diced
1 teaspoons garlic cloves, minced
2 tablespoons ginger, peeled and grated
2 tablespoons honey
6 cups water
1/2 cup coconut milk
1/8 teaspoon cayenne
salt & white pepper to taste

Melt the butter in a large pot and saute the onions, carrots, celery & garlic until soft. Add the grated ginger and cook until fragrant. Add the water & honey and bring to a boil. Reduce heat to a simmer and cook until carrots are thoroughly cooked.
Remove pot from heat and let soup cool slightly. Using your food processor or blender, puree soup until smooth, no large chunks!*
Return soup to the pot and bring to a simmer. Add coconut milk (feel free to add more if you want a creamier soup!), cayenne pepper, salt & pepper to taste. Enjoy!

*For a smoother texture pour your soup through a fine sieve after processing.

Recipe for a Cold Winter: Take one part Windy City,two parts sub-Arctic temperatures, mix vigorously.

A soup is only as good as its stock. More Than Gourmet’s line of Beef, Vegetable & Chicken Stock ($5.25) are the best around. More Than Gourmet also makes Glaces from Duck, Chicken, Lamb,
Veggies & Seafood ($3-8.50)

Homemade soup doesn’t have to start from scratch. Let Cockwell & Company Gumbo Mix ($12.95) or Green Chile Stew ($11.95) give you a leg up. All you have to do is add the meat.
Canterbury Organics Mixes make soup making a cinch. Add Pumpkin to their Curried Pumpkin Soup Mix ($6.50). After The Feast Lentil Soup Mix ($6.50) requires your left-overs to create a scrumptious bowl.
