Good Food Awards Winner Seal .O.2013There are times when you want the smoky-umami flavor of bacon, but don’t want to down a bunch of strips, or maybe you just want to add even more depth of flavor to your BLT. Say hello to our Smoked Onion Marmalade (SOM), a winner of the 2014 Good Food Award for pickling, and an all-around store favorite.

Our Smoked Onion Marmalade is likely one of the preserves we constantly churn out always selling through our stock and the long growing season of onions help make it readily available. We smoke a portion of the onions, both red and delicious sweet Vidalia, in a tiny container, a batch a time. We let the onions carry much of the sweetness, and add a bit of sweet depth with brown sugar and honey – allowing them to compliment and not take the reign. Allowing the natural sugars in the onions do much of the heavy lifting allows for a more complex condiment, this is also why we add two types of vinegar – making the perfect onion marmalade doesn’t just take smoke, but an even hand at the wheel of flavor. We like our SOM on veggie sandwiches, mixed into chili, on charcuterie boards, spread across sausages, on crostini with goat cheese, and so much more.
