In the warm wafts of summer there is nothing like a good cut of fish dressed in sun drenched local veggies.

For our Halibut, we take a thick slice of halibut and pan fry it to perfection; leaving it soft and fork tender in a way that beckons to be eaten. Up top, roasted summer vegetables that pique our interest that week at the market (like squash, zucchini and cauliflower) are roasted and sliced for easy sharing. All of which is nestled into our mojo verde, a punch of fresh cilantro to bolster that summer taste and feel. A delicate but still full dish, bright and flavorful, a great patio item.

Get this one quick before it’s off our Supper menu, summer is only so long!
